Chocolate Kiss Cheesecake Brownies

Updated: Oct 12, 2020

Here's a blast from the past...

The first time I made this dish was in 2016. I was looking for a fun dessert to make with my twin sons, who were 11 at that time. But I needed to craft something grown-up enough that my 15-year-old daughter would be equally interested.

Elijah, my preteen sous chef, hopped into the kitchen to bake with me. It's always a pleasure to cook with kids. Check out our YouTube video below.

It was so much fun trying to figure out the best combination of ingredients and getting the measurements just right.

We had a blast making it!

Four years later, my kids still request this dessert. The best part is, sometimes, they make it themselves!

To save on time, I recommend that you start with a store-bought fudge brownie mix. It’s easy enough to use a scratch recipe if you prefer.

Cooking with kids is fun but this recipe is just as delicious for adults. These would be devoured on game-days, potlucks and parties!

Covid-19 won't last forever--we'll be partying with our peeps in no time--but don't rush it. If you're cooking for one or two during this time at home, simply make the whole recipe, then freeze half a dozen brownies for a rainy day. Thaw at room temperature for a few hours and enjoy, they'll taste as fresh as the day you baked them.

On special occasions my family, loves to up the fun factor by making chocolate kiss cheesecake brownie ice cream sundaes. Warm a brownie for 15-20 second in the microwave, so the chocolate kiss softens just enough to create an unctuous chocolate center in your sundae. Place a scoop or two of vanilla bean ice cream on top, then add a dollop of whipped cream and your favorite crushed nuts or sprinkles. Don't forget a juicy cherry on top!
