Move over ketchup covered beef meatloaf, there's a new sheriff in town.
The combination of ground lamb and veal creates a beautiful velvety texture. And with just a few key ingredients, the entire main dish feels light. That's no easy task for meatloaf.
I like to pair lamb and veal meatloaf with creamy mashed potatoes or risotto and a simple cucumber salad.

But it's the glaze that puts it over the top. Seriously, 3 ingredients is all it takes:
Balsamic vinegar
Brown sugar
Heirloom tomatoes

We love leftovers at my house. Fold leftover meatloaf in a warm pita with cucumber, tomato and a dollop of tzatziki sauce. Yum!
